A Analysis of production process from the perspective of cleaner production Applied in restaurants

Abstract

This article proposes to analyze in published case studies the process of implementing cleaner production (PML), applied in restaurants, its challenges and results. The restaurant production sector generates impacts on the environment and their analysis can contribute to the definition of strategies for their mitigation. In this context, this study's main objective was to investigate published research on the application of cleaner processes in restaurants in Brazil and its challenges.
